Butter Chicken

This recipe was a great success in many Durban homes... we thought to take it from our tables to yours. A delicacy like traditional butter chicken is a must...not only is it delicious and mouthwatering, it is also simple and fun to make.

What you will need:

  • 4 large chicken breasts (cubed)
  • 50g butter and 250ml cream
  • 410g tomato puree
  • 2 teaspoons of garam masala
  • 2 teaspoons of red chilli powder
  • ½ teaspoon coriander powder
  • 2 teaspoons of ginger and garlic paste
  • 1 teaspoon of green chilli paste
  • 1 teaspoon sugar
  • Freshly ground black pepper
  • Salt to taste
  • Dhania for garnish

Let’s get started with the fun.

In a pot, heat half butter and add the ginger garlic and green chilli paste. Sauté for a minute, then add the cubed chicken, sprinkle a pinch of salt and some freshly ground black pepper to the chicken. Fry the chicken until it browns on all sides.
Remove the chicken and set aside, add the remaining butter to the pot and wait until it melts. Add the tomato puree, red chilli powder, salt and sugar. Stir well and add a little water to make thick gravy. Bring mixture to a boil on high heat for five minutes. Reduce the heat and add the chicken pieces. Stir gently to coat the chicken pieces with a mixture. Simmer for another five minutes. Add the cream and simmer for a further five minutes.
Garnish with coriander leaves and serve hot with rice or roti.
