Durbanite Bunny Chow
South Africans took Vegan Food to a new level with a traditional Beans BunnyChow!
It's legendary, cheap and super delicious... Here is how to indulge in the Durban delight:
1 loaf of uncut fresh bread (cut into 3 equal parts/quarters)
2 tins of Koo Broad Beans in tomato sauce
1 teaspoon of curry powder
1 teaspoon of turmeric powder
1 teaspoon of garlic
Salt & Pepper to taste
Cooking oil - just enough to coat your pan
1 bunch of coriander
1 sprig of curry leaves
On the stove, put the oil into your saucepan and heat. Throw one 1piece of onion in to test the oil... when it sizzles, it's all good to go. Throw the balance of the onions into the pan and give that a stir. Then put in the garlic and allow to braise. Add the curry powder, turmeric and curry leaves into the pan and allow to braise. If your mixture starts to stick, add a small amount of boiled kettle water and stir. Open the cans of beans and toss them into the pot, stirring continuously. Lower the heat on the stove and allow to cook. Add salt and pepper and lastly the washed coriander sprigs last and allow to cook on low heat.
Pull out the soft center of your bread (dig deep but not all the way to the bottom). This must hold the curry without spilling.
Using a ladle/spoon scoop the curry from the pot into the bread crater and place the remaining bread on top or on the side... ready to serve!! A side carrot salad just adds a new dimension to the meal.
